    Shift Leader


    Shift Leaders at Five Guys learn valuable new skills that can help them develop a career for their future. Shift Leaders need to implement all the standard operational procedures of the company and make sure that every customer receives the best customer service possible.



    Requirements:


    • Monitors and observes the day-to-day activities of subordinates, coordinates breaks for hourly associates, and keeps management informed of area activities and any significant problems

    • Completes opening, daily and closing procedures/checklists in accordance with company policies/procedures

    • Coordinates with management for on-the-job training of new associates

    • Operates cash register and voids transactions as needed while following all HMSHost cash handling policies and procedures, and maintains proper security of cash at all times

    • Transfers supplies and equipment between storage and work areas by hand or use of a hand truck

    • Implements product rotation based on product code dates in warehouse and concepts, orders product and participates in physical inventory counts as required

    • Resolves customer complaints in a manner consistent with company policy, and with customer satisfaction in mind

    • Practices excellent food safety and sanitation practices and complies with HACCP standards

    • Monitors compliance with safety guidelines, builds awareness about safety, and reports any safety concerns to management

    Who are we?

    BASIC FUNCTION: The dual-role of bartender/barista will set up and prepare bar/barista station for the restaurant and assist with bar setup for banquet functions. The bartender/barista will also be responsible for providing guests with exceptional service, requisitioning of beverages, the creation and execution of quality alcoholic & non-alcoholic beverages, as well as breakdown bars at the end of functions.

    The David Rubenstein Forum is a University-wide facility for scholarly and academic discourse on campus. The venue supports and promotes inquiry, the open exchange of ideas, and the power of academic, interdisciplinary convening. The Forum is located at the intersection of East 60th Street and Woodlawn Avenue.     ESSENTIAL FUNCTIONS:


    BAR DAVID:

    • Serving alcoholic / non-alcoholic beverages and food to customers in a friendly, courteous and professional manner to exceed expectations
    • Serving alcohol responsibly only to those who are of legal age
    • Compose and be knowledgeable of standard cocktails, spirits and wines specific to restaurant bar
    • Compose and be knowledgeable of standard coffee, espresso and tea service
    • Plan and maintain par levels for bar inventory
    • Responsible for cash handling and bank procedures as outlined by the Accounting Department Responsible for learning suggestive selling techniques and using them during services
    • Maintain cleanliness of all workplace areas that apply to the bar

    BANQUET BARS:

    • Set up for host or package bar to include proper glassware for beverages offered, requisition beverages needed for length of time of function, gather mixers needed and prepare garnishes when needed.
    • Service bar as scheduled or requested by client, replenish products behind the bar when needed.
    • Break down bar and all equipment used.
    • Complete nightly closing protocols to include but not limited to the return of all beverages to proper storage areas and finish inventory sheet(s).
    • Maintain a clean, sanitary, and well-organized work environment.
    • Proper requisitioning of all beverage products.

    The Line Cook assists the Lead Line Cook/Executive Sous Chef/Sous Chef in heavy production and fabrication of food products for kitchen preparation, cafeteria, banquet cooking, dining room, and fine dining. The Line Cook should maintain adequate production level form the Kitchen staff.

    BASIC FUNCTIONS:

    The Line Cookis a vital role in our F&B department . Working closely with the Lead Line Cook/Executive Sous Chef to m aintain a commitment for exceptional guest service and employee career and personal development. Position ma intai ns the highest quality while balancing appropriate food cost. The Line Cook excels on the line at his/her station. Position possesses the ability to reliably have their mise en place set by service time and make sure the rest of the line is following suit. Position must be able to handle stressful environment and be still deliver high quality results.

    QUALIFICATIONS: EDUCATION, KNOWLEDGE, TRAINING, & WORK EXPERIENCE

    • Three + years culinary experience in a high volume, upscale, chef driven kitchen.

    • Culinary school or related experience is a bonus.

    • Basic k nowledge of soups, sauces, butchery, and cooking techniques.

    • Above average knife skills.

    • An understanding of menu preparation, ordering and production organization.

    • Knowledge of being able to achieve specified cooking on a variety of steaks and fishes.

    • Hard-working, consistent, and assertive personality .

    • Must have a sense of pride, sense of respect and a sense of urgency .

    ESSENTIAL FUNCTIONS:

    • Responsible to assist in food storage, product rotation

    • Prepare food items designated by the Chef de Cuisine/Sous Chef according to the Chef's standard recipes and policies.

    • Working on a kitchen line for 5 hours handling approx. 350-500 covers.

    • Alerting the Sous Chef to below quality product discovered in food storage.

    • Assist in the r esponsi bility for the care and cleanliness of all kitchen equipment.

    • Inspect refrigeration and dry storage for proper handling / rotation at the beginning and end of business .

    • Report irregularities and defects in equipment and machinery to S ous C hef /Chef de Cuisine .

    • Ensu re that the stations are clean and that all food items are properly covered and stored at the end of shift.

    • Monitor production and quality levels of all food products.

    • Keep open and daily communication with both direct reports and leadership .

    MARGINAL FUNCTIONS:

    • Any other duties as instructed by management .

    • A ssist in other areas of the kitchen as needed.

    • M aintain ongoing programs for sanitation and safety.

    • Exceptional k nowledge of kitchens and storage areas.

    ENVIRONMENT:

    Hot, busy and noisy conditions are commonplace . At times, the job may be in a guest facing role and the ability to work quickly and quietly is necessary.
