Here's how to prepare Moroccan Tagine:
Ingredients:
- 500 grams of meat, cut into small pieces
- 2 onions, chopped
- 2 potatoes, cut into large pieces
- 2 carrots, cut into large pieces
- 1 cup boiled chickpeas
- 1 cup peeled and chopped tomatoes
- 1 teaspoon turmeric
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon cinnamon
- 1/2 teaspoon ground coriander
- 1/2 teaspoon cumin
- 1/4 cup olive oil
- 2 cups water
Instructions:
- Heat the oil in a large pot over medium heat. Add the onion and stir until softened.
- Add the meat and brown on all sides.
- Add the potatoes, carrots, chickpeas, and tomatoes to the pot.
- Sprinkle the turmeric, salt, black pepper, cinnamon, coriander, and cumin over the ingredients in the pot.
- Pour in the water and stir well.
- Bring the mixture to a boil, then reduce the heat to low and cover the pot with a lid.
- Let the tagine simmer for 1 to 1.5 hours, or until the meat is tender and the vegetables are cooked through.
Serve the tagine hot, garnished with fresh herbs or chopped nuts if desired.
