Job Description

We are recruiting for a new entertainment business in London that will be launching in the Autumn of 2021 and needs a Head Chef to join them who has the drive and capability to become the groups Executive chef in the near future as the business ia about to explode

The role of the (Group Executive) Head Chef is to lead the strategy, production and delivery of food services, kitchen set up, systems and processes across all areas of food production

This role will start with hands-on management of the food services at first UK site, but there is scope to oversee food services and menu development across future sites and for the UK business.

This is a role for a self-starter and a team player who is willing to both lead the kitchen team but initially to also step in to work alongside them as Head Chef as we get the first venue launched and running smoothly.

MAIN RESPONSIBILITIES

  • Take responsibility for the food production with a hands-on approach
  • Train, develop and regularly give feedback on the performance of the team
  • Ensure the communication with all other F&B teams is efficient and respectful
  • Maintain operating standards, including health and safety and hygiene standards and consistently review all statutory requirements.
  • Follow business trends, metrics, and reports to drive performance
  • Control and direct the food preparation and presentation
  • Oversee and implement efficient restaurant and kitchen management systems to improve speed and consistency of workflow, reduce costs and automate processes where possible.
  • Manage and lead the Kitchen team, training and developing Chefs of all levels to ensure the highest quality of product and service for all BigShots Golf customers,
  • Develop the menus, recipes and dishes for the brand
  • Determine food inventory needs, stocking and ordering
  • Ensure financial documentation and accountancy of the food service (and those from suppliers) is accurate and within agreed budgeted levels
  • Be responsible for ensuring the kitchen meets all regulations including sanitary and food safety guidelines
  • Be responsible for health and safety and food hygiene practices
  • At times, the role will require you to step into fulfil, or take over, any position in the kitchen. Delivery and service will be the absolute priority.
  • Work effectively and collaboratively with other departments and communicate clearly with operational and sales teams to help improve customer service, and brand reputation wherever possible.

EXPERIENCE & KNOWLEDGE

  • Previous experience in a Head Chef or similar group role, with experience of volume catering and hospitality
  • Excellent knowledge of all sections and a willingness to step in, and be hands on in the role
  • Excellent managerial and organisational skills and experience of managing a team of Chefs
  • Industry acumen and knowledge of external catering developments and innovations
  • Knowledge of restaurant and kitchen management tools and systems
  • Good communication skills and ability to communicate at all levels
  • Tech savvy with a willingness to adapt and learn
  • Good financial awareness
  • Personal innovation and passion for quality food
  • Experience working in a standards/compliance environment
  • High level of attention to detail
  • Enthusiasm to develop your own skills and knowledge plus those around you
  • Adaptability to change and willingness to embrace new ideas and processes
  • Ability to work unsupervised and deliver quality work, to be innovative and proactive
  • Positive and approachable manner
