Here's how to prepare Moroccan Tagine:

Ingredients:

  • 500 grams of meat, cut into small pieces
  • 2 onions, chopped
  • 2 potatoes, cut into large pieces
  • 2 carrots, cut into large pieces
  • 1 cup boiled chickpeas
  • 1 cup peeled and chopped tomatoes
  • 1 teaspoon turmeric
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon cumin
  • 1/4 cup olive oil
  • 2 cups water

Instructions:

  1. Heat the oil in a large pot over medium heat. Add the onion and stir until softened.
  2. Add the meat and brown on all sides.
  3. Add the potatoes, carrots, chickpeas, and tomatoes to the pot.
  4. Sprinkle the turmeric, salt, black pepper, cinnamon, coriander, and cumin over the ingredients in the pot.
  5. Pour in the water and stir well.
  6. Bring the mixture to a boil, then reduce the heat to low and cover the pot with a lid.
  7. Let the tagine simmer for 1 to 1.5 hours, or until the meat is tender and the vegetables are cooked through.

Serve the tagine hot, garnished with fresh herbs or chopped nuts if desired.
